Tomato Pasta
So if I’ve done anything during this quarantine, it’s cooking. Cooking, cooking, cooking. And to be honest, I’ve really enjoyed it. It gave me some time to try new recipes but also indulge in things that I love. This is one of the things that I love. And if someone would ask me what my go-to-quarantine-meal has been, this has to be the answer. It’s simple, doesn’t require a lot of ingredients and it so delicious.
You’ll Need:
Cherry tomatoes
Pasta (for this recipe I prefer linguine or paccheri)
Lemon
Burrata
Garlic
Olive oil
Salt & pepper
How To:
Bring some salted water to a boil for the pasta. Cook the cherry tomatoes in a pan with lots of olive oil and cover with a lid. Let the tomatoes cook for a while on medium to low heat until you see the skin of the tomatoes starting to come loose if you stir a tiny bit. Once the skin starts to loosen, try to take it off with cooking tongs or with a fork. This can be tedious work but it’s worth it in the end. Keep the tomatoes cooking without burning or the liquid reducing it too much. Add some chopped, pressed or halved garlic to the tomatoes – whatever you prefer and let cook for a little bit longer. Once the pasta is drained, season it with salt if needed and pour over some olive oil. Remove the tomatoes from the heat and pour the pasta into the pan with tomatoes. Squeeze the fresh lemon juice over the pasta to your liking. Stir and cover the pasta in the tomatoes and lemon. Plate the pasta immediately and cut pieces of the burrata and place on top. Season with salt, pepper and olive oil to your own liking.
Notes:
As you can tell I haven’t given you any precise measurements. And that’s because I never use them for this dish. I just eyeball it and see what looks and tastes best to me. Don’t be scared to try and to adjust afterwards. At the end of the day we all like it differently so season to your own liking. It’s a super simple dish but so delicious when the burrata melts and is mixed together with the pasta and makes it all creamy… Mmmm! I’m getting hungry…
